When you have nabe-mono, or hotpot cuisine, with your friends, sometimes you'll see someone being usually eager to organize the cooking tasks. The kind of person who takes charge of the hotpot is jokily called the hotpot governor. There are two types of hotpot governor; one type just makes the hotpot for everyone, while the other type gives orders or explanations to other people about how to make it. Furthermore, the person who keeps skimming the surface of the hotpot is jokily called an aku-daikan, meaning "evil governor" and with aku also meaning "residue." People who just wait for the hotpot to be prepared and then eat it are called machi-musume (city girl) meaning "waiting girls" with machi (city) also meaning waiting.
Don't eat more than your fair share of the ingredients.
Add ingredients to the pot if you are sitting close to the nabe.
Don't use chopsticks the wrong way round.
Don't take too much food at once.
Eat at the same speed as other people.
In short, nabe is a type of cuisine where you need to be considerate of other people and enjoy sharing.
Depending on what kind of nabe you make, the way you cook it will be different. Here's a basic yose-nabe recipe. Make the soup. Basically, you can use either seaweed, fish or chicken. Cut the ingredients into bite-sized pieces. If the ingredients are not easy to boil whole, slice or cut them to a size that can be boiled more easily. Example ingredients: Chinese cabbage, scallions, herbs (shungiku, muzuna and so on), Chinese mushrooms, chicken, shrimps, noodles (added after the other ingredients have been eaten. Eat the ingredients when they have boiled. There are two ways to serve: season the soup with salt or soy sauce, or eat the ingredients with a sauce such as ponzu (sour soy sauce), sesame seed sauce or various others.
鍋を仕切る人＝person in charge of the hotpot。
